Our bakehouse

Our dough rests overnight.

We mix the sourdough in the afternoon and let it rest in the cold for 18 hours. The first loaves come out of the oven at 6:30, so the shelves are full when we open.

How we bake.

How we bake.

How we bake.

Made by Hand

Every loaf is shaped by hand. No dough comes from a factory.

Slow Fermentation

Our sourdough rises for a full day. That gives it its taste.

Seasonal Ingredients

Apples in autumn, rhubarb in spring. The pastry list changes with the market.

Local Flour

Our flour comes from a mill an hour away. We buy it in small sacks every week.
